Just put a couple of nice butts(just under 18 lbs)on my Traeger pellet fired grill for a few hours of pecan and oak smoke. First I injected them with a apple cider and Steen's Cane vinegar, massaged them with some Steen's cane syrup and then rubbed them down with a mixture of dry rub. They're already smelling pretty darn good too.

Something you've got to remember this time or year. You must stay hydrated, so drink lots of liquids. Even if you are sitting inside while cooking outdoors. Lol....

I did get up once at around 3:30am to check the internal temps and make sure there were still enough pellets to keep it going until this morning.
That's when they were just downright gorgeous looking.

Too hot to handle right now butt, I'll pull it later when it gets cooler and get another picture then. With that bark looking like that this is gonna be some good stuff.

Alright so I was shooting for making pulled pork out of these butts. Well. that didn't happen. When I picked them up to pull them after cooling about 30 imnutes they fell apart. Lol..... Instead I made fall aprt pork out of them. These things were so tender and juicy! I said it the last time I did this but, these two are probably the BEST pork butts I have ever smoked.

Here's a close up of the fall apart pork. Note the pink from the smoke.And the bark is fantastic!

I ended up with two half pans of pulled/fall apart pork(probably about 16 lbs of pulled/fall apart pork).
