This was my entry on another forum for a Iron Chef Throwdown. We had to use Skirt steak, portobello mushrooms and corn meal.

Corn Meal Crepes stuffed with Portobello Mushroom and Goat Cheesed Spinach over Grilled Spicy Skirt Steak

Alright, even though it may take me a few days for the water log wrinkles to go away I decided to enter my contribution to this IC cookoff.

I will say that I think there should be exceptions for bad weather related entries. I don't think it has ever taken me so much time to cook something before.

Saute'd the portobellos in some butter with a lil garlic.

Whipped upi some spinach with a bechamel and goat cheese for the crepe filling with the mushrooms.

Oh, I had to have a cold Kalik while doing all this cooking!

Not exactly the easiest thing to do on a grill!

Meat marinated overnight in a spicy marinade.

Skirt steak grilled over about 650* Hickory lump charcoal.

Then on to the Skirt steak and Portabellas drizzled with Annies Garlic

A quick use of the dremel made a easy job of opening the egg shells, emptied eggs and sterilized. Now let dice and slice and fill them eggs up.

Don't forget the beef broth on the Primo Grill

Add a little gelatin to the Beef broth and fill up the eggs.

Very cool and colorful Keymaster!

Thanks Jim and Jess for the comments. I happened to overcook the skirt steak a bit. I wanted it to still be pink in the middle.

Something for those of you not familiar with these types of little throwdowns. You have to cook the majority of the entry on your outdoor grill whichever type that may be.
